Wednesday - What's for Dinner? Traditional Crock Pot Roast

I made this meal Sunday night.... this evening my husband and I are actually going a DATE, so my children will probably be enjoying IHOP with their granddaddy while he and I are eating downtown.

If you can't tell, I love my crockpot! This roast recipe is the best one I've made so far - hope you like it!

4-5 lb. beef roast
carrots
5 potatoes
1 yellow onion
celery
water
bay leaves
seasonings

Put your roast in the crockpot (some people say brown it first, but I just seasoned mine with salt and pepper and put in the crockpot). Peel 10 carrots and surround the roast with them. Chop potatoes in quarters and put in crockpot, along with cut up onion and 1 stalk of chopped celery. Put 2 cups water over top over meat, then add 2 bay leaves in the water. Season everything with salt, pepper, and garlic salt (or your own seasoning blend). Cook on low 6-7 hours (or until roast is done) or on high 3-4 hours.

I made a simple gravy by taking the juices after cooking and combining them with cornstarch (whisk together cornstarch and water until thick) and seasoned salt and simmering until consistency you wish.
