Tonight I'm making a double dinner . I have a good friend who has is a teacher and has been sick for the first few weeks of school, not really knowing what was wrong. Turns out she has Mono - and she has two teenagers who still need to eat, and a husband who travels during the week. I'm happy to take her dinner, because I remember a day a couple of years ago when I was in the hospital having surgery and she brought my parents and children a wonderful meal and just made sure everything was going ok at my house.
So, here's tonight's recipe. It is pretty easy and can last for a few meals. I think I was making this a few months ago and blogged about it, but didn't post the recipe.
Ravioli Casserole26 oz. jar spaghetti sauce, divided
25 oz. package frozen cheese ravioli - cooked and divided
2 c. cottage cheese, divided
4 c. shredded mozzarella cheese, divided
1/4 c. grated Parmesan cheeseSpread 1/2 cup spaghetti sauce in a lightly greased 13x9 inch baking dish; layer with half the ravioli. Pour 1 1/4 cups sauce over ravioli; top with one cup cottage cheese and 2 cups mozzarella cheese. Repeat layers; sprinkle with Parmesan cheese. Bake, uncovered, at 350 degrees for 40 minutes. Let stand 10 minutes before serving. Serves 6-8.
